The 9 chosen ones – although Champagne is overwhelmingly dominated by 3 grape varieties, current legislation allows local winemakers to use up to 9 different varieties.

Pinot Noir

37 %

A well-known and historic Burgundy grape variety. A dark berry with a light soul — it gives Champagne body, tannin, and the ability to age with elegance. It only becomes more interesting with time. In blends, it forms the “backbone of the wine.” Aromatically, it adds fruity and spicy notes.

Meunier

31 %

The second and last dark grape variety grown in Champagne. Meunier is fruity, approachable, and often generous. In young cuvées, it brings pronounced fruitiness, making them more accessible. Its role in them is the “blood and muscles” of the whole wine. Until recently, it was used almost exclusively in blends, but today you will often encounter wines made solely from Meunier.

Chardonnay

31 %

The first and most widely planted white grape variety of the region. Citrus, white flowers, light and yellow orchard fruits, and a hint of sea air. In blends, it forms the “soul of the wine.” For over a hundred years, it has also appeared in a solo performance — Blanc de Blancs — and once you experience it in this form, you will keep seeking it again.

Champagne AOC appellation rules

Geographical delimitation of vineyards

The grapes must come exclusively from the Champagne AOC region. No exceptions! Place is the first ingredient — and the most important one.

Only permitted grape varieties

9 approved grape varieties — and no others. Centuries of selection have shown what thrives best in this soil and what is best suited for producing the local wines.

Hand harvesting of grapes

The grapes must be harvested intact and whole — so that dark grape varieties do not color the juice prematurely. No machine does it better than a hand that knows what it is looking for.

Maximum yield

The maximum is set annually by the CIVC. A winemaker’s decision that has one of the most significant impacts on the final wine.

Gentle pressing

From 4,000 kg of grapes (the historic 1 marc), a maximum of 2,550 liters of must can be obtained. The rest is discarded. Only the best and finest must is used to create the world’s finest sparkling wines!

Traditional method of production

Secondary fermentation directly in the bottle — the same bottles that rest in restaurant cellars. Then long aging, riddling, and disgorgement. A centuries-old ritual with no shortcuts.

Minimum bottle aging

Non-vintage wines: minimum 15 months, vintage wines: 36 months. Time is not a budget item — it is an ingredient that cannot be bought, accelerated, or replaced.

Label designation

Name “Champagne,” producer, bottle volume, alcohol content, and producer code (NM, RM, CM…). The label is not just marketing — it is an identity card. Learn how to read it correctly!

History

1st century AD – The beginning of a tradition

The Romans establish the first vineyards. On the cool slopes, they plant the seed of a story that will last two millennia. They did not know it then — today we do.

5th–9th century – Wine for the coronations of kings

Still “Champagne” flows at coronations in Reims. The region receives its first major role — as the backdrop of power and sacred moments. Yet still without a single bubble.

Late 17th century – The birth of sparkling wine

Dom Pierre Pérignon raised his glass: “Friends, come quickly, I am drinking stars!” Whether he actually said it or not — from that moment on, no one tried to stop the bubbles in wine anymore.

1729 - Ruinart

The first Champagne house — the trade in bubbles takes on a formal face. Nicolas Ruinart opens first, kicking off a race that continues to this day. He is followed by Moët, Clicquot, Bollinger, Krug… and many more!

Early 19th century – Industrial improvements

The invention of riddling, bottle standardization, and the first modern production methods. Champagne stops being the privilege of the nobility — and begins to conquer the world.

1927 – Geographical boundaries of the region

The Champagne region receives its “final map” and rules, exactly as we know them today. The region’s identity is established — and with it the answer to the question: what exactly is Champagne?

1936 – Creation of the Champagne AOC appellation

The rules from 1927 are given legal form. Not every sparkling wine in the world is allowed to bear this noble name. Quality received its shield — and has held it firmly ever since.

1941 - Creation of CIVC

Comité Interprofessionnel du Vin de Champagne (CIVC)– guardian of traditions for future generations. An institution that ensures the promise in every bottle is upheld.

1980s – The rise of grower Champagne

Anselme Selosse, Vincent Bliard, Georges Laval, and a whole line of their followers — the original philosophy of the region, today so often described as “Burgundian,” survived for an entire century only in the hearts and minds of the growers. Today, however, we can also taste it thanks to their wines.

Vigneron (Grower)

He owns the vineyards, grows the grapes, and makes the wine himself from his own plots. Each bottle has a specific address — a parcel, a hill, a village, or a season. Grower’s Champagne is like a handwritten letter: you immediately recognize who wrote it and where it comes from.

Interesting facts about Champagne

Wine from Champagne has nearly 2,000 years of history behind it. The bubbles only arrived at the end of the 17th century, but it took them a very long time to conquer the region — even in 1850, sparkling wine production in Champagne accounted for less than 6% of the region’s total wine production. The name “Champagne” only gained legal protection in the last century, after a series of international court disputes.

Jeroboam, Balthazar, Nebuchadnezzar — these biblical names for bottle formats did not arise from religious reverence, but from purely practical logic: in the 19th century, winemakers decided that monumental bottles deserved monumental names.

A bottle holds 6 bars of pressure — the same as a bus tire. It is therefore a small engineering marvel that has existed in various forms for over 300 years.

Below 5 °C, wine freezes into silence. The aromas withdraw, the bubbles harden, the finish disappears. Only roughness and sharp acidity remain. Champagne is not ice — it’s a conversation. And every conversation needs the right temperature… and the right space!

Recommended serving temperature for Champagne:

Non-vintage: ~8 °C Vintage: ~12 °C 15+ years: 15–18 °C

So choose the right glass as well. Flutes and coupe glasses have hopefully rung their final bell… at least we hope so :) Much more suitable are glasses for white still wines, or so-called “universal” glasses.
